Colombian sugar cookies (Polvorosas)





These cookies are very popular all year round and specially for the holidays. They are very easy to make and simply delicious.

Ingredients:

1/2 pound of clarified butter
1/2 cup icing sugar
1 teaspoon pure vanilla extract
2 1/4 cups all purpose flour.
Sanding or shimmering sugar to decorate

To clarify the butter add 1/2 pound plus 2 tablespoon of butter on a small heavy pot and simmer in low heat until the butters is completely melted and all the fat content is on the surface. Remove the fat with a spoon and keep the liquid content.

-Preheat the oven to 350 F. Place the butter in a bowl and with the help of a mixer, beat it to medium speed for 2 minutes. Add the icing sugar and vanilla and continue mixing for 8 minutes.

- Decrease the speed to low and add the flour and mix to incorporate for 1 minute.

- Form into 2 tablespoon balls and flatten with your hands.  Place the decorating sugar on a plate and press the cooking on one site to stick the sugar on them.

- Place the cookies on a baking sheet covered with parchment paper. Bake for 25 to 30 minutes.

They can keep up to a week in a covered tin.
